Detox Dandelion-Lentil Salad

No matter how hard we try, we’re all bound to fall off the healthy-food wagon at least once in awhile. Whether it’s burgers from a drive-through window on a rushed night or overindulging at a family holiday meal, the good news is that you can soothe and nourish your body after these little dietary detours with a delicious salad like this one made with detoxifying dandelion greens, beet greens, peppers, lime, and cilantro.

Not only does this refreshing recipe help cleanse the body overall—the bitter dandelion greens and turmeric quickly soothe those digestive discomforts that often creep up after eating overly rich or sweet foods, and lentils provide prebiotic fiber and a gentle protein source that’s easy on overworked tummies. The added bonus: Turmeric has a supportive effect on whole body wellness, including the brain, immunity, and cardiovascular system!

So if you’re in the throes of a junk food hangover, you’re only a super fast (and super simple) salad away from getting back on track. And this recipe might make you feel so good, you’ll opt for raw veggies more often.

Salad Ingredients:
• 1 red bell pepper, diced
• 1 orange bell pepper, diced
• 1 cup cooked sprouted lentils
• 1 bunch finely chopped cilantro
• ½ cup chopped baby dandelion greens
• 1 cup chopped beet greens
• 2 tablespoons raisins
• 1 avocado, sliced

Instructions:
Toss first seven ingredients together in a large bowl. Immediately before serving, top with sliced avocado.

Dressing ingredients:
• 2 tablespoons olive oil
• Himalayan pink sea salt to taste
• Fresh ground black pepper to taste
• 1 tablespoon turmeric
• 1 teaspoon cumin
• ¼ teaspoon coriander
• ⅛ teaspoon cayenne pepper (optional)
• Juice of one lime
• 1 teaspoon honey

Instructions:
Stir together all ingredients and mix into the salad.
