Vanilla Bean Birthday Cake

The rich chocolate frosting for this cake is a breeze to make as well! Just make sure to leave time to chill the coconut milk in the fridge for a minimum of two hours to thicken it up before making the frosting, and then chill the completed frosting an additional two hours before spreading it.

So get out your apron, put on your favorite tunes, find some birthday candles, and preheat that oven. It’s time to celebrate!

• 1 15.5 oz can white beans (or 1¾ cups of home-cooked white beans at room temperature)
• 6 eggs
• 1 teaspoon vanilla liquid stevia
• ¾ teaspoon vanilla extract
• ⅓ cup local honey
• ¼ cup coconut oil (liquified)
• ⅓ cup of coconut flour (sifted)
• 1 teaspoon baking soda
• 1 ½ teaspoon baking powder

Preheat oven to 325 degrees Fahrenheit. Then place the beans, eggs, stevia, vanilla, and honey in a food processor and puree until smooth. Add the remaining ingredients to the mix, and puree thoroughly. Pour the batter into an oiled springform pan with parchment paper on the bottom, and bake until a knife inserted in the center of the cake comes out mostly clean (generally between 30 and 50 minutes). Allow cake to cool before frosting.

Chocolate Coconut Milk Frosting

• 2 13.5 oz cans of coconut milk (chilled at least two hours)
• 2 tablespoons pure maple syrup
• 6 drops of chocolate liquid stevia
• ¾ teaspoon vanilla extract
• 1 tablespoon raw cacao powder

Spoon the solid chilled coconut milk into a mixing bowl. (Save the remaining liquid to pour over oatmeal or use in a smoothie!) Add remaining ingredients and whip until smooth and creamy. For an additional prebiotic boost, blend in a scoop of our organic prebiotic powder! Refrigerate for at least two hours and then spread over cooled cake.
