You’ll never even miss the mashed potatoes. Mashed cauliflower is an outstanding source of prebiotics, vitamin C, vitamin K, folate, and other B vitamins, making it a delicious and healthy side dish to pair with just about anything.
1 medium head of cauliflower
1-2 garlic cloves, minced
2 tablespoons of coconut oil, melted
1⁄4 cup of unsweetened nut milk of your choice
Salt and pepper, to taste
Optional: chives or other fresh herbs
Pre-heat the oven to 400°F. Chop the cauliflower into florets and steam until they’re tender. Put the cauliflower in your high-powered blender or food processor along with the garlic and coconut oil. Puree the mixture until smooth. Slowly add milk until the consistency is thick and creamy. Salt and pepper to taste.
